Emma Koefoed

Emma joined Valley Vision in 2017 as a Project Associate. In 2019 she became a Project Manager lending her skills to manage Valley Vision’s Food and Ag impact area and the We Are Farm to Fork initiative. This includes managing Valley Vision’s Food for Thought Newsletter, the Farm to Fork Steering Committee, and maintaining the Farm-to-Fork Live event series. In addition, she supports all external and internal events, providing onsite logistical support for not only Valley Vision, but to our system partners as well. Emma has helped plan and coordinates more than two dozen different events across several impact areas including Future Focus, Valley Vision’s 25th Anniversary, and the Listos California Campaign.

Professional Experience

Prior to Valley Vision, Emma worked in several nonprofits including the Farmer Veteran Coalition, where she traveled nationally to help educate veterans about post-secondary careers in farming and agriculture. She also spent time as an event planner for UC Davis’s Institute of Transportation Studies assisting with the production and coordination of several high-level events including the ITS 25th Anniversary, ITS Board Meetings, Symposiums, Three Revolutions, and other internal and external happenings.

While she started her undergrad career at San Francisco State University, she completed her education at the University of California Davis receiving a B.S in Sustainable Agriculture and Food Systems—the first new major to be added to UC Davis in more than 50 years.

Emma chose her academic career based on her passion for food, farming, and the roles she believes they play in the vitality and development of communities. She grew up on a 56-acre farm in Vacaville, Ca where she has helped support her family farming operation Soul Food Farm.

Education

Emma received her B.S in Sustainable Agriculture Food Systems from the University of California, Davis in 2013.

Interests

Emma enjoys exploring the food scene in Sacramento, traveling, and spending time with her friends and family. Emma recently joined the Sacramento Metro Edge program in 2020.
